Atlantic Dawn stocks are currently caught and processed by the Irish registered fishing vessels the 'Veronica' and 'Atlantic Dawn'. The Veronica's production process involves a very precise grading and picking line which sorts the catch by size and weight.


Conveyor belts then distribute the fish from holding bins to numerous vertical plate freezing machines where the catch is frozen to a temperature of -22 degrees before being packaged and stored in one of the on-board cold stores.
